African Fish Curry Powder Recipe

Ingredients
  • Well stirred
  • Desired
  • 1/8 ts Dried hot red pepper flakes
  • 2 ts Paprika
  • 4 Garlic cloves
  • 2 Shallots
  • 4 lb Chicken wings; about 20-24
  • 2 tb Vegetable oil
  • 1/3 c Natural style peanut butter
  • 1 ts Dried rosemary -- crumbled
  • 1/4 c Water
  • Tips removed
  • Or to taste
  • 1 ts Soy sauce
  • 1 tb Chinese 5 spice
  • 2 Garlic cloves -- sliced
  • FOR THE SAUCE-----
  • Coriander sprigs -- f If
  • 1/4 c Canned cream of coconut --
  • 1/4 c Red bell pepper -- sliced
  • FOR THE WINGS-----
  • 1 1/2 ts Salt
  • 1/2 ts Cayenne -- or to taste

Directions
  • Step #1 THE WINGS: Prepare the chicken wings: Mince & mash the garlic and shallots to a paste with the salt.
  • Step #2 In a large bowl stir the paste together with the 5 spice powder, rosemary, cayenne, paprika, & the oil.
  • Step #3 Mix well.
  • Step #4 Add the chicken wings.
  • Step #5 Toss & stir them until they are completely covered with the marinade.
  • Step #6 Let them marinate, covered & chilled for 4 hrs or over night.
  • Step #7 Arrange the wings, skin side up, on the rack of a foil lined large broiler pan & bake them in the upper third of a preheated 425F oven for 25 to 30 mins or until they are golden.
  • Step #8 The wings may be prepared one day in advance, kept covered & chilled & then reheated before serving.
  • Step #9 THE SAUCE: In a mixer, water, red pepper flakes & the soy sauce until the mixture is smooth, cream of coconut, bell pepper, garlic, Spice up the sauce with salt, mix together the peanut butter, to taste.
  • Step #10 THE PRESENTATION: Transfer the sauce to a serving bowl set on a platter.
  • Step #11 Arrange the wings around the bowl & garnish the platter with the coriander.
