Aggie's Irish Soda Bread Recipe

Ingredients
  • 2 ts Fresh ginger root -- grated
  • 1/3 ts Bottled fish stock Vegetable stock
  • 1/2 c Flour
  • 2 oz Soy Or Tamari sauce
  • 1/2 c Water
  • 1 tb Sugar or honey
  • Vegetable oil for frying
  • 2 pk 10.5 oz. firm tofu
  • 8 Fresh scallions -- sliced

Directions
  • Step #1 Wipe tofu dry with paper towels.
  • Step #2 Cut the tofu in each box in half, then cut each half into four equal portions.
  • Step #3 Flour each portion lightly.
  • Step #4 Heat vegetable oil to medium hot (350 to 375 degrees).
  • Step #5 Add the tofu, a few at a time.
  • Step #6 Fry until golden & remove to drain on paper towels.
  • Step #7 Prepare sauce by placing the water, soy or tamari sauce, sweetener & stock in a saucepan.
  • Step #8 Bring to a boil & mix well, making sure sugar (if using) is dissolved.
  • Step #9 To serve, place a small amount of the sauce on four warmed plates.
  • Step #10 Divide the tofu evenly among the plates, placing them on the sauce.
  • Step #11 Garnish with grated ginger & sliced scallions.
