Ingredients
  • 1 c Olive oil
  • Milk
  • 1/8 ts Salt
  • Lemon juice
  • 1 tb Boiling water
  • 1 Thick slice French bread
  • 4 Cloves garlic
  • 2 Egg yolks /

Directions
  • Step #1 I find a recipe in my Encyclopedia of Cooking by JoAnna Morris for aioli.
  • Step #2 Here it is: Remove the crusts from bread & soak in milk.
  • Step #3 Squeeze dry.
  • Step #4 place this in large mortar with garlic & mash with pestle until a fine paste.
  • Step #5 Add the yolks & salt & mash in.
  • Step #6 Drop by drop lb in olive oil.
  • Step #7 When the sauce becomes thick; the remaining oil may be beaten in.
  • Step #8 Thin with water & lemon juice to taste.
