Albondigas (spanish) Recipe

Ingredients
  • 1 Tomato, sliced
  • 1/2 c Brown rice, uncooked
  • 1/2 ts Comino
  • 8 c Water
  • 2 Carrots, sliced thin
  • 1 Clove garlic, sliced
  • 1/2 c Chili huerta
  • 1 Thick slice French bread
  • 2 Yerba buena
  • 1 Onion, sliced fine
  • 1/2 ts Tomio
  • 1 c Peas, fresh or frozen
  • 1/2 lb Ground beef
  • 1 Egg
  • 1/2 lb Ground pork

Directions
  • Step #1 Mix pork, egg, beef, 1/2 of onion, rice, & tomio together; make into small balls.
  • Step #2 Bring water to boil & add balls; simmer at low boil for 1 hr.
  • Step #3 Add tomato, chili, garlic, & rest of sliced onion; let simmer 35 mins.
  • Step #4 Add yerba buena & let simmer 10 mins.
  • Step #5 Soak french bread in small amount of soup broth until very soft.
  • Step #6 place this in mixer with comino; chop together; add to soup.
  • Step #7 Next add carrots & peas; simmer until vegetables are tender.
  • Step #8 Serve.
