All-bran Extra Fiber Muffins (ovo Lacto) Recipe

Ingredients
  • 1/3 c Tomato paste
  • Salt -- to taste
  • 1 1/2 c Water
  • If needed
  • 1 1/2 tb Minced fresh oregano
  • 3 tb Cumin seed
  • Masa harina or cornmeal --
  • 3 c beef broth
  • 6 lb Beef chuck -- in 1/2-inch
  • Cubes
  • Cayenne pepper -- to taste
  • 1/3 c corn oil
  • 1/3 c Minced garlic
  • 1/4 c High-quality chili powder,
  • 6 lb Tomatoes
  • Drained & sliced
  • c Minced onion
  • 3 c Flat beer
  • Or more -- to taste

Directions
  • Step #1 1.
  • Step #2 In a large heavy skillet over moderately high heat, warm 3 tbsps of the oil.
  • Step #3 Brown beef in batches, adding more oil as necessary & transferring meat with a slotted spoon to a large stockpot when well browned.
  • Step #4 Do not crowd skillet.
  • Step #5 2.
  • Step #6 Reduce heat to moderately low.
  • Step #7 Add onion & garlic & saute until softened (about 10 mins).
  • Step #8 Add to stockpot along with broth, the water, chili powder, beer, tomato paste, tomato, & oregano.
  • Step #9 3.
  • Step #10 In a small skillet over low heat/flame, toast cumin seed until fragrant; do not allow to burn.
  • Step #11 Grind in an electric minichopper or with a mortar & pestle.
  • Step #12 Add to stockpot.
  • Step #13 4.
  • Step #14 Over high heat bring mixture to a simmer.
  • Step #15 Add salt, cayenne, and more chili powder to taste.
  • Step #16 Reduce heat to maintain a simmer and cook, partially covered, until beef is tender (about 1-1/2 hrs).
  • Step #17 Check every once in awhile & add more broth if mixture seems dry.
  • Step #18 If chili is too thin when meat is tender, stir in the up to 2 tbsps masa harina.
  • Step #19 Cook an extra 5 mins to thicken.
  • Step #20 Serve chili hot.
