Alligator Jambalaya Recipe

Ingredients
  • 1 lb Dark crabmeat
  • 4 Alligator filets
  • Stuffing:
  • 1/4 c Margarine
  • 1/2 c Onions -- sliced
  • 1 Egg
  • 1/4 c Bell pepper -- sliced
  • 1 1/2 c Bread crumbs from day old
  • Bread
  • 1/4 ts Black pepper
  • 1/2 ts Cayenne pepper
  • 1 c Water
  • 2 ts Parsley -- sliced
  • 1/4 c Celery -- sliced
  • 1/2 ts Garlic powder
  • 2 Chicken bouillon cubes
  • 1/4 c Scallions -- sliced
  • 1 ts Salt

Directions
  • Step #1 Carefully lb alligator filets into hand-size rectangles, without tearing meat.
  • Step #2 Lightly Spice up this with salt & cayenne pepper.
  • Step #3 Set aside.
  • Step #4 In a large skillet, melt margarine & Saute onion, bell pepper and celery until tender.
  • Step #5 Add salt, pepper & garlic to mixture & stir.
  • Step #6 Dissolve bouillon cubes in water, add to mixture & boil for 3 mins.
  • Step #7 remove this from heat.
  • Step #8 stir in the remaining ingredients, carefully folding in the crabmeat last.
  • Step #9 Spoon stuffing onto alligator filets & fold over "omelet-style.
  • Step #10 " Secure edges with toothpicks if desired.
  • Step #11 Grill in a pre-heated 350 lightly greased skillet.
  • Step #12 Serve plain or with your favorite seafood sauce.
