Almirah Boscotakia (salty Biscuits) Recipe

Ingredients
  • 1/2 c Lime
  • 1 c Salt
  • 1 g Water
  • 1 Red pepper pod

Directions
  • Step #1 Put 1/2 c lime in about 1 gallon of boiling water & scald quickly, & pull off hair while hot.
  • Step #2 Scrape well--remove feet, tail, & entrails--like you would a pig.
  • Step #3 Cut off ears, remove eyes & head if desired.
  • Step #4 Pour hot water over it & clean thoroughly.
  • Step #5 Put one c salt in sufficient cold water to cover possum, add 1 pod red pepper & let this stand overnight.
  • Step #6 In the morning remove salt water & pour boiling water over it.
  • Step #7 Cook in enough boiling water to boil up over possum but not enough to cover.
  • Step #8 cook this until skin can be pierced with a fork easily, & let this stand in water until ready for baking.
  • Step #9 When ready to bake, place possum in pan with skin side up.
  • Step #10 Bake in a moderate oven until crisp & brown.
  • Step #11 If fire is too hot, skin will blister & burn.
  • Step #12 Carve possum & surround with potatoes (sliced or quartered) which have been previously baked.
