Chicken With Herb Sauce Recipe

Ingredients
  • 2 tbsps minced fresh parsley
  • 1 tsp minced fresh basil
  • 2 tsps lime juice
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 2 tbsps minced chives
  • 1/2 c chicken broth
  • 1/4 tsp pepper
  • 4 boneless, skinless chicken breast halves
  • 2 tbsps butter or margarine, divided
  • 2 tbsps olive or vegetable oil, divided

Directions
  • Step #1 Place the chicken breasts between two sheets of waxed paper; flatten evenly with a mallet.
  • Step #2 Sprinkle top both sides with salt & pepper.
  • Step #3 In a large skillet, heat 1 tbsp each of butter & oil; brown chicken over medium-high heat for about 6 mins on each side or until juices run clear.
  • Step #4 Remove & keep warm.
  • Step #5 Stir broth, parsley, lime juice, basil, chives, mustard & remaining butter & oil into drippings; cook & stir until butter is melted.
  • Step #6 Serve over chicken.
