Step #1 --STREUSEL----- 1/2 c Brown sugar; packed 1/2 c Almonds; chop, cut pieces----CAKE------- 3 c Cake flour; sifted 1 tb Baking powder 1 c Whole almonds; toasted 3/4 c Unsalted butter; room temp 1/2 c Almond paste 1 2/3 c Sugar 1/2 ts Almond extract 1 c Milk 6 lg Egg whites; room temp---GLAZE------ 1 c Powdered sugar 1/4 c Whipping cream 1 ts Instant coffee powder 1/3 c Almonds; sliced, toasted 3/4 ts Cinnamon 1/3 c Old fashioned oats 1 1/2 ts Instant coffee powder -=OR=- - expresso powder 1/4 c Butter; chilled, toasted STREUSEL: Mix all but butter in a small bowl.
Step #2 Add butter & rub in with fingertips until well mixed.
Step #3 Set aside.
Step #4 CAKE: preheat your trusty oven to 350~.
Step #5 Butter & flour a 12-c Bundt pan.
Step #6 Mix flour & baking powder in a small bowl.
Step #7 Finely grind almonds in processor.
Step #8 Using electric mixer, beat butter & almond paste in a large bowl until mixed.
Step #9 slowly beat in 1-1/3 c sugar.
Step #10 Continue beating until fluffy.
Step #11 Beat in extract.
Step #12 stir in the dry ingredients alternately with milk.
Step #13 Mix in ground almonds.
Step #14 Using electric mixer fitted with clean dry beaters, beat egg whites in another large bowl to medium peaks.
Step #15 slowly add in the remaining 1/3 c sugar & beat until stiff but not dry.
Step #16 Fold meringue into batter in 2 additions.
Step #17 Transfer half the batter to prepared Bundt pan.
Step #18 Sprinkle top streusel over.
Step #19 Spoon remaining batter over.
Step #20 Bake cake until tested done, about 1 hr.
Step #21 Cool in cake pan on rack for 20 mins.
Step #22 Turn cake out onto rack & cool completely.
Step #23 (Cake can be made 1 day ahead; cover & let this stand at about room temp.
Step #24 ) GLAZE: Stir powdered sugar, whipping cream & instant coffee powder in a small bowl until well mixed.
Step #25 Drizzle glaze over cake, allowing to run down sides.
Step #26 Sprinkle top cake with sliced almonds.
