Almond-poppy Muffins Recipe

Ingredients
  • 3 c Flour
  • 1/2 ts Salt
  • 2 c White sugar
  • 1 ts Baking powder
  • Topping:
  • 2 lg Eggs
  • 1/4 c Confectioners' sugar
  • 1/2 c Sour cream
  • 1 1/2 c Salted butter -- softened
  • 1/3 c Poppy seeds
  • 1/3 c Amaretto or almond liqueur

Directions
  • Step #1 preheat your trusty oven to 350.
  • Step #2 Grease & flour 2 loaf pans.
  • Step #3 In a large bowl, with an electric mixer, mix flour, sugar, salt & baking powder on low until all ingredients are well mixed.
  • Step #4 Add butter, sour cream, and 3 eggs.
  • Step #5 Mix on medium until dry ingredients are moistened & beat on high 2 mins then scrape bowl.
  • Step #6 add in the remaining 3 eggs, one at a time, alternating with amaretto.
  • Step #7 Beat well after each addition.
  • Step #8 mix in poppy seeds on lowish speed.
  • Step #9 Pour batter into prepared pan & bake 50-60 mins or until toothpick inserted in center comes out clean.
  • Step #10 Cool in pan 10 mins & invert cake onto a rack to cool.
  • Step #11 When cake has cooled completely, lightly dust top this with confectioners' sugar.
