Almost No-cal Red Beans & Rice Recipe

Ingredients
  • 6 tb Butter or margarine
  • Cheese
  • 2 c sliced onion
  • Cubed
  • 4 c sliced celery
  • 4 c Water
  • 2 ts Salt
  • 1 c Shredded sharp cheddar
  • 4 c Half-and-half
  • 8 c Potatoes -- peeled and

Directions
  • Step #1 Place potatoes, celery, onions, & salt in the 4 c of water in a large pot.
  • Step #2 Simmer about 15 mins until vegetables are tender.
  • Step #3 Put in mixer & puree until chunky.
  • Step #4 Return soup to pot & add half-and-half, butter, & cheese.
  • Step #5 Simmer until hot.
  • Step #6 Do NOT Boil.
