Aloha Cookies Recipe

Ingredients
  • Chow mein noodles; optional
  • 4 1/2 c Rice; cooked
  • 1 c Pineapple chunks; canned, unsweetened
  • 1 c Radishes; thinly sliced
  • 1 tb Margarine;
  • 2 Chicken Bouillon cubes; Borden Low Sodium
  • 1/2 c Juice from pineapple;
  • 1 ts Light soy sauce;
  • 2 tb Flour;
  • 1 c Green pepper; sliced
  • ds Pepper;
  • 2 1/2 lb Chicken pieces; skinned

Directions
  • Step #1 Simmer the chicken in water with bouillon cubes.
  • Step #2 Remove meat from bones & cut into chunks.
  • Step #3 Save 1 c of chicken broth.
  • Step #4 While chicken is cooking, melt margarine in frying pan or wok & saute the radishes, green peppers, & pineapple until crisp tender, but not brown.
  • Step #5 (Put rice on to cook.
  • Step #6 ) Mix 1 c saved chicken broth with 1/2 c pineapple juice & 1 tsp.
  • Step #7 soy sauce.
  • Step #8 Add to pan.
  • Step #9 Mix flour with 1 Tb.
  • Step #10 cold water & stir this to remove lumps.
  • Step #11 Add to vegetables.
  • Step #12 Add cut up chicken & a dash of pepper, & cook this until everything is hot.
  • Step #13 Serve over rice.
  • Step #14 If desired, Sprinkle top chow mein noodles on top.
  • Step #15 Serves 6.
  • Step #16 (Portion is 3/4 c mixture served over 3/4 c cooked rice.
