Kadayif (middle Eastern Cheese Dessert) Recipe

Ingredients
  • 1 lb Commercial raw kadaifi dough
  • 1/2 c Sweet butter; melted
  • 3 1/2 c Granulated sugar
  • 1/2 c Honey
  • 2 tb Lemon juice
  • 1 1/2 c Finely sliced almonds
  • 1/2 c Orange juice
  • 2 c Water
  • Ground cinnamon

Directions
  • Step #1 Note: Use blanched almonds.
  • Step #2 Open the raw kadaifi dough to the air for 10 to 15 mins.
  • Step #3 Spread half the pastry evenly over the bottom of a 9 x 12 x 3-inch baking pan & brush with half the butter.
  • Step #4 Meanwhile, 1 tbsp cinnamon, mix the almonds, 1/2 c sugar, & orange juice in a small bowl.
  • Step #5 (The orange juice will make the mixture like a paste that can be spread with a knife.
  • Step #6 ) Spread the almond mixture over the kadaifi & cover with the remaining dough.
  • Step #7 Brush with the remaining butter and bake in a moderate oven (350 F) for 40 mins or slightly longer, until golden on top.
  • Step #8 Meanwhile, boil the remaining 3 c sugar with water for 5 mins.
  • Step #9 stir in the the honey & lemon juice, bring to a boil & keep hot.
  • Step #10 When done, remove the pastry to a rack to cool in the pan, then spoon the hot syrup over the pastry.
  • Step #11 Cover with a dry towel and allow this to cool thoroughly.
  • Step #12 When cool, cut into square or diamond shapes of any desired size.
  • Step #13 Dust with extra ground cinnamon just before serving on dessert plates.
