Kaeng Paa Kai (jungle Curry With Chicken) Recipe

Ingredients
  • 4 c Water
  • 1 tb Tomato paste
  • 1/2 ts Salt
  • 1 c Dry red lentils
  • 1 md Onion; sliced
  • 2 ts Chow
  • 1 tb Corn oil

Directions
  • Step #1 Kae Misr Wot is a red lentil stew.
  • Step #2 In pan, cook the lentils in 3 1/2c of the water over low heat for about 1/2 hr, or until the lentil are soft & the water has almost completely evaporated.
  • Step #3 Set aside.
  • Step #4 In a dry pan, stir fry the onions for 2 mins, add the oil & stir fry 2 mins more.
  • Step #5 Add the remaining 1/2c water, the tomato paste, chow, & salt & continue to stir.
  • Step #6 Add the red lentils & mix well over moderate heat for 3 mins until everything is reduced to a thick, well Spice uped puree.
  • Step #7 Serve warm with Injeera.
