Kaeng Phed (meat Curry) Recipe

Ingredients
  • Salt, to taste
  • 1/4 ts Lemon rind; grated
  • 6 Cloves garlic; minced
  • 1/8 ts Caraway seed
  • Steamed rice; to accompany
  • 1 Red bell pepper; seeded and cut into thin strips
  • 4 lg Whole chicken breasts
  • 2 tb Peanut oil
  • 4 Green onions; sliced
  • 1 ts Fresh coriander; sliced
  • 1/2 ts Sugar
  • 2 c Coconut milk
  • 1/4 ts Shrimp paste or anchovy paste
  • 1 tb Dried hot chiles; crushed
  • 1/4 ts Ground coriander
  • 1 ts Paprika

Directions
  • Step #1 Bone chicken breasts, remove skin (reserve for stock or another future use), & cut breasts into strips 1/4" wide & 2" long.
  • Step #2 In a large wok or skillet, heat oil until it is almost smoking.
  • Step #3 Add chiles, lemon rind, paprika, caraway, and sugar, garlic, ground coriander, shrimp paste, & stir rapidly for 1 min.
  • Step #4 Add chicken breasts & stir-fry until evenly coated with Spice upings & hot throughout (about 2 mins).
  • Step #5 Pour in coconut milk & bring to a boil, stirring constantly.
  • Step #6 stir in the green onions, fresh coriander, and bell pepper.
  • Step #7 Spice up to taste with salt.
  • Step #8 as soon as possible remove this from heat.
  • Step #9 serve this with hot steamed rice.
