Kalamarakia Pilafi (squid Baked With Rice) Recipe

Ingredients
  • 3/4 c Dry Red Wine
  • 1 1/2 tb Parsley, sliced
  • 2 tb Olive Oil
  • 2 lb Squid
  • 1/2 ts Salt, Pepper, Sugar

Directions
  • Step #1 Clean squid, discard tenacles, wash bodies & drain.
  • Step #2 Place squid in a heavy saucepan with olive oil, wine, salt, pepper & sugar.
  • Step #3 Bring to a boil, reduce heat & let simmer for an hr.
  • Step #4 remove this from heat, cool, Sprinkle top with parsley & serve.
