Kapuska (sauerkraut) & Kielbasa Recipe

Ingredients
  • 1 lg Head of cabbage
  • Salt & pepper
  • 3 sl Bacon
  • 1 pk Wide egg noodles

Directions
  • Step #1 Preparation: Grate cabbage onto a large dish or platter.
  • Step #2 Sprinkle top liberally with salt & let this stand for 1/2 hr.
  • Step #3 This will help release excess water.
  • Step #4 While cabbage is "resting", fry the bacon to rend the fat.
  • Step #5 Discard bacon or make a B.
  • Step #6 --.

  • Step #8 Squeeze out water from the cabbage & saute in the bacon drippings until golden brown.
  • Step #9 Add salt & pepper to taste.
  • Step #10 Meanwhile, break up the egg noodles so that they're short & fat rather than long & fat.
  • Step #11 Boil according to directions on box.
  • Step #12 When cabbage is done, add the noodles & mix thoroughly.
  • Step #13 This dish is even better the second day.
  • Step #14 Serve as a side dish or, if you make enough of it, a main course.
