Kate's Favorite Birthday Cake :::gwhp32a Recipe

Ingredients
  • Heavy cream
  • Raw sugar
  • 6 c Bramble fruit
  • 1 lb Whole wheat bread

Directions
  • Step #1 In a two-quart pudding mold, crush but don't sieve the fruit.
  • Step #2 Sweeten to taste with raw sugar (not brown sugar).
  • Step #3 Tear into small pieces enough homemade whole-wheat bread, crust & all, to pack the mold till it's full.
  • Step #4 put in the fridge the pudding for something between 6 & 24 hrs.
  • Step #5 Don't even dream of unmolding it, just spoon it out & serve it with heavy unsweetened cream.
  • Step #6 NOTES: Uncooked fruit & bread pudding -- Here is my friend Kate Ashcroft's Yorkshire version of the dessert known as "summer pudding".
  • Step #7 For "bramble fruit" use some berry that grows on a brambly vine.
  • Step #8 Raspberries, blackberries, presumably huckleberries & ollalie berries.
  • Step #9 Some currants are OK, but no strawberries, even some blueberries are OK, some gooseberries are OK, they don't fit the mood.
  • Step #10 Day-old bread is better than dead fresh for this recipe, but not older than a day.
  • Step #11 For contrast, here is the standard version: In a two-quart pudding mold, truck out one pint of Woolworth's raspberry jam with enough Golden Syrup to make a quart & a half of goo.
  • Step #12 Tear into small pieces enough stale crumb, not crust, of bakery white bread to pack the mold till it's full.
  • Step #13 put in the fridge the pudding for six weeks.
  • Step #14 serve this with Bird's Custard Sauce.
  • Step #15 : Difficulty: easy.
  • Step #16 : Time: 10 mins preparation, 6 hrs cooling.
  • Step #17 : Precision: no need to measure.
