Kate's Party Cake :::gwhp32a Recipe

Ingredients
  • 1 ts Vanilla
  • 4 1/2 c Cake Flour; sifted
  • 5 Egg whites; stiffly beaten
  • 3/4 c Butter; or shortening
  • 4 1/2 ts Baking Powder
  • 1 1/2 c Milk
  • 1 tb Lemon rind; grated
  • 2 1/4 c Sugar
  • 1/2 ts Salt
  • 3 Egg yolks; well beaten

Directions
  • Step #1 Sift flour once, measure, add baking powder & salt & sift together three times.
  • Step #2 Add lemon rind to butter & cream thoroughly.
  • Step #3 Add sugar slowly, and cream together until light & fluffy.
  • Step #4 Add flour, a small amount at a time, alternately with milk, beating after each addition until smooth.
  • Step #5 Add vanilla.
  • Step #6 Fold in egg whites quickly & thoroughly.
  • Step #7 Fill greased 10-inch layer pan with one-third of mixture.
  • Step #8 To remaining mixture, add egg yolks & mix.
  • Step #9 Turn into two greased 10-inch layer pans.
  • Step #10 Bake layers in moderate oven (375 degrees F.
  • Step #11 ) 25 to 30 mins.
  • Step #12 Arrange white layer between yellow layers, Spread Orange Filling (see recipe) between layers & Orange Mist Frosting (see recipe) on top & sides of cake.
  • Step #13 Sprinkle top top this with orange coconut, made by mixing 4 oz.
  • Step #14 shredded coconut & 1 1/2 tsps grated orange rind.
