Chicken Pot Piei Recipe

Ingredients
  • 2 tbsps vegetable oil
  • 2 c frozen mixed vegetables
  • 3 stalks celery
  • 1 (14.5 oz) can chicken broth
  • 1 (9 inch) frozen prepared pie crust, thawed
  • 2 tbsps all-purpose flour
  • 1 to taste salt & pepper to taste
  • 3 bone-in chicken breast halves, skinless
  • 3 potatoes
  • 1 yellow onion
  • 1/4 tsp garlic powder

Directions
  • Step #1 Wash chicken breasts in water & then place this in a pot with water just to cover the chicken add some salt & pepper & garlic powder.
  • Step #2 Bring to a boil, turn off heat & cover.
  • Step #3 Let cool in the pot.
  • Step #4 Preheat oven to 350 degrees F (175 degrees C).
  • Step #5 Wash & cut potatoes into bite size pieces & boil till almost fork tender.
  • Step #6 Drain & set aside.
  • Step #7 Wash celery & cut to bite-size pieces.
  • Step #8 Cut onion to bite-size pieces.
  • Step #9 In a large heavy skillet, saute celery & onion with 2 tbsps oil, over med-heat/flame, for 5 to 8 mins.
  • Step #10 Add the frozen vegetables & cook another 5 mins.
  • Step #11 Add flour & cook about 30 seconds.
  • Step #12 Add chicken broth & bring to a boil.
  • Step #13 After it has become thick, add potatoes.
  • Step #14 Remove chicken from pot & cut into bite-size pieces & add to vegetable mixture.
  • Step #15 Add salt & pepper to taste.
  • Step #16 Pour mixture into a 9 inch deep dish pie plate & cover with pie shell.
  • Step #17 Make sure you crimp the edges of the pie shell to the plate so no juices spill in oven.
  • Step #18 Bake at 350 degrees F (175 degrees C) for 45 mins or until pie shell is cooked & golden brown.
