Kay's Dressing & Poppy Seed Dressing Recipe

Ingredients
  • 1/4 ts Salt
  • 1/3 c Apricot Preserves
  • 3 tb Light Corn Syrup
  • 2/3 c Water
  • 2 c Sugar

Directions
  • Step #1 Generously grease an 8x8-inch cake pan.
  • Step #2 In a 2-quart saucpan, water, mix the sugar, corn syrup & salt until well mixd.
  • Step #3 Stirring with a wooden spoon, bring the batch to a full boil over high heat.
  • Step #4 When the mixture starts to boil, cover the saucepan & allow to boil for 1 min.
  • Step #5 Remove the cover & wash down the sides of the pan with a pastry brush dipped in hot water.
  • Step #6 Clip a candy thermometer onto the side of the pan & cook at high heat, 5 to 8 mins or until mixture reaches 240 degrees.
  • Step #7 Remove the saucepan from the heat & without removing the thermometer, allow mixture to cool to 150 degrees & then add the preserves.
  • Step #8 Beat with an electric mixer on lowish speed for 4 mins.
  • Step #9 Pour the mixture into the cake pan.
  • Step #10 allow this to cool at about room temp for 45 mins, then with a wet knife, score the top into 1-inch squares.
  • Step #11 put in the fridge for 1 hr.
  • Step #12 remove this from the refrigerator & place a piece of wax paper on top of the fudge.
  • Step #13 Turn the pan upside down onto to a work surface to remove fudge from pan.
  • Step #14 Turn fudge right-side up and with a wet knife, cut the fudge into 1-inch pieces, wiping the blade between each cut to insure clean slices.
  • Step #15 Wrap & store pieces in the refrigerator.
  • Step #16 MAKES about 3 dozen pieces.
