Kernel Censor's Fried Chix Recipe

Ingredients
  • 1 tb Lemon juice
  • 2 lb Collard greens
  • Freshly ground black pepper
  • Minced
  • 2 md Plum tomatoes, peeled,
  • 1/4 ts Salt
  • 1/2 c Finely sliced onion
  • 2 tb Canola oil
  • 1 Jalapeno pepper, seeded and
  • Seeded & sliced

Directions
  • Step #1 1.
  • Step #2 Wash the collard greens in several changes of water.
  • Step #3 Remove the stems.
  • Step #4 Stack the greens a few at a time & cut crosswise into 1/2-inch wide strips.
  • Step #5 Bring a large pot of water to the boil, add the collard greens & cook 10 mins.
  • Step #6 Drain & rinse with cold water.
  • Step #7 Squeeze out the excess moisture.
  • Step #8 2.
  • Step #9 Heat the oil in a large skillet.
  • Step #10 Add the onion and jalapeno; saute 5 mins.
  • Step #11 Add the tomatoes & cook 1 min.
  • Step #12 3.
  • Step #13 stir in the the greens, salt & pepper.
  • Step #14 Cook 5 mins.
  • Step #15 stir in the the lemon juice & cook 1 min.
  • Step #16 Serve.
