Key Lime Pie I - Low Fat Version Recipe

Ingredients
  • 1 Whole graham cracker pie
  • 4 Whole egg yolks
  • Crust, 9 inch
  • 1/4 c Powdered sugar -- sifted
  • 14 oz Sweetened condensed milk
  • 1/2 c Key Lime juice
  • 2 c Heavy cream

Directions
  • Step #1 Bake pie shell or use a graham cracker crust if you prefer.
  • Step #2 Beat yolks on medium speed until thick and lemon-colored.
  • Step #3 Heat juice in a saucepan over medium heat until thoroughly heated.
  • Step #4 slowly stir about 1/4 of hot lime juice into yolks & then add yolks to remaining hot lime juice in saucepan - stirring constantly.
  • Step #5 Cook 2 mins - stirring continually.
  • Step #6 remove this from heat & cool.
  • Step #7 Add sweetened condensed milk - stirring until mixture thickens.
  • Step #8 Spoon filling into crust.
  • Step #9 put in the fridge until thoroughly chilled.
  • Step #10 Beat cream with electric mixer at high speed until foamy.
  • Step #11 Add sugar, 1 tbsp at a time until stiff peaks form.
  • Step #12 Spoon whipped cream onto pie.
  • Step #13 put in the fridge until serving time.
