Kidney Bean Bonanza Recipe

Ingredients
  • 3/4 ts Baking soda
  • Ground ginger
  • 1/4 c Boiling water
  • 2 c All-purpose flour
  • 1/2 c Unsalted butter
  • 1 c Light-brown sugar
  • 1 1/2 ts Each of cinnamon and
  • 1/4 ts Salt
  • 1/4 c Molasses

Directions
  • Step #1 Place sugar, spices, salt & baking soda in a large bowl.
  • Step #2 stir in the water until sugar is dissolved.
  • Step #3 stir in the butter until melted, then molasses.
  • Step #4 slowly stir in the about 1 1/2 c flour.
  • Step #5 Continue stirring in remaining flour a little at a time.
  • Step #6 When dough becomes stiff, flour hands & knead until firm enough to roll out.
  • Step #7 Roll out right away, or wrap & put in the fridge for up to 2 weeks or freeze.
  • Step #8 To roll out, place half of dough on a lightly floured board.
  • Step #9 Roll to 1/4-inch thickness.
  • Step #10 Use a floured cookie cutter to cut out shapes.
  • Step #11 Place on a greased baking sheet.
  • Step #12 Bake in a preheated 300F oven for 15 to 20 mins or until edges are firm.
  • Step #13 store this in a covered container at about room temp.
  • Step #14 This recipe can be doubled easily.
  • Step #15 Makes about 34 (3-inch) star-shaped cookies.
