King Arthur's Egg Braid Recipe

Ingredients
  • 1 tb Salt
  • 1 tb Sugar
  • 1 pk Active dry yeast
  • 6 c Flour
  • 2 c Warm water

Directions
  • Step #1 Mix yeast,sugar,salt & water together.
  • Step #2 let this stand until salt sugar & yeast are dissolved.
  • Step #3 slowly add flour to liquid & mix throughly, until dough pulls form bowl sides.
  • Step #4 Turn ontofloured work surfaceand knead 5 mins, Let dough rest while you grease bowl.
  • Step #5 Knead dough again 2-3 mins, Place dough in bowl, turn once to grease top.
  • Step #6 Cover with damp towel & keep warm until doubled in bulk(1-2 hrs) Punch down dough & knead briefly to get out any air pockets.
  • Step #7 Cut in half, shape into 2 Italian or french style loafs.
  • Step #8 Put on cookie sheet Sprinkle topd with cornmeal.
  • Step #9 Rest 5 mins.
  • Step #10 Lightly slash tops 3 times diagonally & brush with cold water.
  • Step #11 Place on rack in cold oven with roasting pan full of boiling water below.
  • Step #12 Bake 400F F for 30-45 mins until crust is golden brown & sounds hollow to the touch,.
