Chocolate Mint Cookies Recipe

Ingredients
  • 2 eggs
  • 36 chocolate mint wafer candies
  • 2 tbsps water
  • 2 c semisweet chocolate chips
  • 1 1/4 tsps baking soda
  • 2 1/2 c all-purpose flour
  • 1 1/2 c packed brown sugar
  • 1/2 tsp salt
  • 3/4 c butter

Directions
  • Step #1 In a large pan over low heat/flame, cook butter, sugar & water until butter is melted.
  • Step #2 Add chocolate chips & stir until partially melted.
  • Step #3 Remove from heat & continue to stir until chocolate is completely melted.
  • Step #4 Pour into a large bowl & let this stand 10 mins to cool off slightly.
  • Step #5 At high speed, beat in eggs, one at a time into chocolate mixture.
  • Step #6 Reduce speed to low & add dry ingredients, beating until mixed.
  • Step #7 Chill dough about 1 hr.
  • Step #8 Preheat oven to 350 degrees F (175 degrees C).
  • Step #9 Roll dough into balls & place on ungreased cookie sheet about 2 inches apart.
  • Step #10 Bake 8-10 mins.
  • Step #11 While cookies are baking unwrap mints & divide each in half.
  • Step #12 When cookies are brought out of the oven, put 1/2 mint on top of each cookie.
  • Step #13 Let the mint sit for up to 5 mins until melted, then spread the mint on top of the cookie.
  • Step #14 Eat & enjoy!.
