Ingredients
  • 2 c Raw rice, rinsed & drained
  • 3 -ft large intestine of beef well cleaned and prepared for stuffing
  • 4 qt Clear beef stock
  • 1/4 lb Ground beef
  • 1/3 c Onion, sliced
  • 1 tb Fresh coriander, sliced
  • 1 ts Pepper, or to taste
  • 3 ea Bay leaves
  • 2 ts Salt
  • 1 ts Peppercorns
  • 1/2 lb Beef lung
  • 4 ea Ribs of celery, halved horizontally
  • 1/2 lb Beef liver

Directions
  • Step #1 1.
  • Step #2 Char the liver over charcoal or under a gas or electric broiler to kosher.
  • Step #3 Cut the liver into 1/4-inch cubes.
  • Step #4 If used, boil the lung in water for 1/2 hr.
  • Step #5 Cool & cut into 1/4-inch cubes.

  • Step #7 In a large bowl, lung (optional), rice, ground beef, coriander, salt, mix together well the liver, and pepper.
  • Step #8 Sew up one end of the intestine (derma) and stuff -- not too tightly since the rice will expand.
  • Step #9 Sew up the opening.
  • Step #10 3.
  • Step #11 On the bottom of a large pan, onion, bay leaves, put the celery, & peppercorns.
  • Step #12 Pour in the clear beef stock.
  • Step #13 Bring to a boil over moderate heat & add the stuffed casting.
  • Step #14 Half-cover the pan & reduce the heat to low.
  • Step #15 Cook for about 45 mins or more, until the skin is tender.
  • Step #16 Serve the kishke warm, sliced.
  • Step #17 Remove the bay leaves & serve the clear soup separately.
  • Step #18 Makes 10 to 12 servings.
