Kiwi Fruit Cream Recipe

Ingredients
  • 1/3 c Fresh lime juice
  • 3 c Sugar
  • 4 tb Rum
  • 1 Pouch 85ml/3oz liquid pectin
  • 2/3 c Unsweetened pineapple juice
  • Green food colour, optional
  • 5 Kiwifruit, peeled

Directions
  • Step #1 Fill boiling water canner with water.
  • Step #2 Place 4 clean half-pint mason jars in canner.
  • Step #3 Cover, bring water to a boil; boil at least 10 min to sterilize jars at altitudes up to 1000 ft.
  • Step #4 Place snap lids in boiling water, boil 5 min to soften sealing comlb.
  • Step #5 In a large stainless steel or enamel saucepan, mash kiwifruit to applesauce consistency.
  • Step #6 stir in the sugar, pineapple & lime juice.
  • Step #7 Bring to a full rolling boil, stirring until sugar dissolves.
  • Step #8 Stirring constantly, boil vigorously for 2 mins.
  • Step #9 remove this from heat, stir in the pectin.
  • Step #10 Continue stirring 5 mins to prevent floating fruit.
  • Step #11 (If desired, add green food colouring to create a more lively, intensely green jam.
  • Step #12 ) stir in the rum.
  • Step #13 Ladle jam into a hot sterilized jar to within 1/4 inch of top rim.
  • Step #14 Remove air bubbles by sliding rubber spatula between glass & food; readjust head space to 1/4 inch.
  • Step #15 Wipe jar rim removing any stickiness.
  • Step #16 Center snap lid on jar; apply screw band just until fingertip tight.
  • Step #17 Place jar in canner.
  • Step #18 Repeat for remaining jam.
  • Step #19 Cover canner, return water to a boil, process 5 mins at altitutes up to 1000 ft.
  • Step #20 Remove jars.
  • Step #21 Cool 24 hrs.
  • Step #22 Check jar seals.
  • Step #23 (Sealed lids curve downward.
  • Step #24 ) Remove screw bands.
  • Step #25 Wipe jars, label and store this in a cool dark place.
