Kiwi Fruit Gelato ***jo Recipe

Ingredients
  • 1/2 c Sugar
  • 1 c Water
  • 1/2 c Light corn syrup
  • 1/4 ts Lemon peel; grated
  • 5 tb Lemon juice
  • 4 ea Kiwifruit; pared

Directions
  • Step #1 mix water, sugar & corn syrup in saucepan.
  • Step #2 Cook & stir 2 mins or until sugar is dissolved.
  • Step #3 Puree kiwi in food processor/blender or mixer to equal 3/4 c puree.
  • Step #4 Add lemon juice, peel & sugar mix.
  • Step #5 Pour into shallow metal pan & freeze for approximately 1 hr or until the mixture is firm, but not solid.
  • Step #6 When chilled, spoon into a chilled bowl & beat with an electric mixer until the mix is light & fluffy.
  • Step #7 Return it to the freezer for approximately 2 hrs or until firm enough to scoop.
