Curried Stew With Lamb Recipe

Ingredients
  • 3/4 tsp ground cayenne pepper
  • 1 tbsp minced garlic
  • 1 c currants
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1 tbsp vegetable oil
  • 8 c vegetable broth
  • 1 c yogurt
  • 1/2 tsp ground cumin
  • 3 tbsps curry powder
  • 1 large onion, grated
  • 2 lbs lamb sirloin, cut into cubes
  • 2/3 c slivered almonds, toasted
  • 2 c water
  • 1 c uncooked rice

Directions
  • Step #1 In a medium bowl, mix yogurt & garlic.
  • Step #2 Stir in the lamb cubes until coated.
  • Step #3 Cover, & put in the fridge overnight.
  • Step #4 In a saucepan bring water to a boil.
  • Step #5 Add rice & stir.
  • Step #6 Reduce heat, cover & let simmer for 20 mins.
  • Step #7 Remove from heat, & set aside.
  • Step #8 Heat oil in a large skillet over medium high heat.
  • Step #9 Saute onions until tender.
  • Step #10 Stir in marinated lamb mixture.
  • Step #11 Spice up with cloves, cumin, ginger, cayenne & curry powder.
  • Step #12 Stir in raisins, reduce heat, & let simmer for 2 hrs.
  • Step #13 Stir in cooked rice & vegetable stock.
  • Step #14 return to a simmer, & cook 5 more mins.
