Korean Dipping Sauce Recipe

Ingredients
  • 1/2 c Uncooked white rice
  • 1 tb Sesame seeds
  • 1 tb Reduced-sodium soy sauce
  • 2 Scallions, finely sliced
  • 1 ts Toasted sesame oil
  • 8 c Homemade chicken broth
  • 2 tb Finely sliced garlic
  • 2 tb Finely grated fresh ginger
  • 1 c Shredded cooked chicken
  • 1 ts Kochujang or other hot chile paste

Directions
  • Step #1 In a small dry skillet, toast sesame seeds over medium-high heat, until lightly browned & aromatic, shaking often, about 1 min.
  • Step #2 Transfer to a small bowl & set aside.
  • Step #3 In a large pot, mix chicken broth, garlic and ginger; bring to a boil over high heat.
  • Step #4 Add rice, reduce the heat to medium-low & let simmer until the rice is tender, 12 to 15 mins.
  • Step #5 stir in the soy sauce & sesame oil; add chile paste to taste.
  • Step #6 Add chicken & heat just until warmed through.
  • Step #7 Ladle the soup into bowls & garnish with scallions & the reserved sesame seeds.
