Confetti Barley Pilaf Recipe

Ingredients
  • 2 1/2 c chicken or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 c shredded carrot
  • 1 garlic clove, minced
  • 1/2 c sliced sweet red pepper
  • 1 c medium pearl barley
  • 1 c sliced fresh mushrooms
  • 1 large onion, finely sliced
  • 1/2 c coarsely shredded cabbage
  • 1 tbsp vegetable oil

Directions
  • Step #1 In a large nonstick skillet, saute onion & garlic in oil until tender.
  • Step #2 Add barley; saute for 3-5 mins or until lightly browned.
  • Step #3 Add the mushrooms, carrot, red pepper, cabbage, basil & oregano.
  • Step #4 Cook & stir until vegetables are crisp-tender, about 3 mins.
  • Step #5 Stir in broth; bring to a boil.
  • Step #6 Reduce heat; cover & let simmer for 40-45 mins or until liquid is absorbed & barley is tender.
