Step #1 Note: Suggested cheeses for this recipe are Greek kefalotyri or Parmesan.
Step #2 Heat the 3 tbsps butter or margarine & cook the shallots until soft, then add the meat & mash with a fork over med-heat/flame until the color changes.
Step #3 Add the wine & let simmer a few mins.
Step #4 stir in the the herbs & tomato sauce; Spice up this with salt & pepper to taste & let simmer for 20 mins.
Step #5 Cool.
Step #6 Add the cheese & egg, & if the mixture is very liquid, stir in the the bread crumbs as soon as possible before stuffing.
Step #7 Filo sheets should be unrolled flat, & cut into thirds (3 x 11 inches).
Step #8 Pile up the filo, covering it with waxed paper & a damp towel.
Step #9 Take out one sheet at a time & keep the rest covered.
Step #10 Butter the filo, one sheet at a time, using a pastry brush & the 1 c melted butter.
Step #11 Place 1 tsp of the meat filling 1 inch from the end nearest you.
Step #12 Fold the filo back over the filling so the bottom edge meets the left edge, forming a right angle.
Step #13 Continue folding back at right angles to make the triangular shape.
Step #14 Place on baking sheets and keep covered until all are ready to bake.
Step #15 Bake in a moderate oven (350 degrees) for 20 to 25 mins or until golden & crisp, turning once.
Step #16 Serve hot.
