2 c Pumpernickel Bread; Preferably German, Day Old Cut Into 1/2-Inch Cubes
5 tb Unsalted Butter
Salt & Freshly Ground Black Pepper
3 c Smoked Kielbasa Or Bratwurst Cut Into 1/2-Inch Cubes
Directions
Step #1 --GARNISH----- Fresh Dill; Finely sliced Melt 4 Tbls of the butter in a large skillet over medium heat.
Step #2 Saute the bread cubes in batches until golden brown & crisp.
Step #3 Transfer to a bowl & set aside.
Step #4 Wipe out the skillet with paper towels.
Step #5 Fry the bacon, in the skillet, over med-heat/flame until it renders out the fat.
Step #6 Add the onion & saute until it begins to color, about 8 mins.
Step #7 Add the kielbasa & cook, stirring, until the onion & kielbasa are nicely browned.
Step #8 Melt the remaining 1 Tbls of butter in a medium-size non stick skillet over med-heat/flame.
Step #9 Add one-fourth of the kielbasa mixture & one-fourth of the bread to the skillet & distribute evenly with a wooden spoon.
Step #10 Break 2 eggs into the skillet.
Step #11 Cook for 2 mins, stirring the whites carefully with a thin spatula.
Step #12 When the whites are almost set & the yolks are still liquid, cover the skillet, reduce the eat to low, & cook for another min or until the desired doneness is achieved.
Step #13 Slide the hash & eggs onto a plate.
Step #14 Repeat with the remaining ingredients to make three more portions.
Step #15 Serve as soon as possible Sprinkle topd with the dill as a garnish.
