Kukul Mus Roast (roast Chicken) Recipe

Ingredients
  • 1 1/4 kg Chicken
  • 1 ts Salt
  • 50 ml Oil
  • 25 g Tamarind squeezed in 50 ml water
  • 300F ml Thick coconut milk
  • 1/2 Stem lemon grass sprig curry leaves
  • 25 g Curry powder
  • 1/4 ts Fenugreek
  • 1/2 ts Curry powder juice 1/2 lime
  • 1/4 ts Turmeric
  • 1 Cm cinnamon stick
  • 2 ts Paprika
  • 1/2 ts Chilli powder
  • 50 g Shallots
  • 3 sl Ginger
  • 2 Cardamoms
  • 1 Fresh chilli
  • 2 Cloves
  • 2 Cloves garlic

Directions
  • Step #1 Wash, clean & joint the chicken.
  • Step #2 shred the ginger, crush the garlic & slice the shallots & chilli.
  • Step #3 Crush the cardamoms & cloves & place this in a bowl.
  • Step #4 Add the ginger, garlic, paprika powder, curry powder, chilli powder, tamarind water, turmeric, salt & cin- namon stick.
  • Step #5 Mix well together, then rub into the chicken.
  • Step #6 Heat the oil in a pan until very hot, then add the lemon grass, fenugreek, curry leaves, shallots & chilli & fry for a couple of mins.
  • Step #7 Add the chicken pieces & stir fry for 3 mins.
  • Step #8 Pour in the coconut milk & mix well.
  • Step #9 Continue to cook over a low heat for 40 mins, or until chicken is tender.
  • Step #10 Discard the cinnamon stick & transfer to a serving dish.
  • Step #11 Finally, Sprinkle top the curry powder & lime juice on top.
