Alu Curry Recipe

Ingredients
  • 1 CAThie Coppolino
  • 1 ts salt
  • 4 lg Potatoes, peeled, sliced
  • 1/2 lb Mushrooms, halved
  • 1 tb Sugar
  • 1 lg Eggplant, peeled, sliced
  • 2 ts Curry powder
  • 2 lg Onions, sliced
  • 2 ts Ground cumin
  • 6 x Garlic cloves, minced
  • 1/4 ts Red chilli powder
  • Water
  • 2 ts Tumeric
  • With juice
  • Olive oil
  • 2 lg Tomatoes, sliced, OR 1 can sliced tomatoes
  • 3/4 ts Ground ginger

Directions
  • Step #1 In large skillet or electric frying pan, heat oil & saute onions and garlic until onions are golden.
  • Step #2 Add potatoes, eggplant, & mushrooms & cook over medium-high heat ten mins.
  • Step #3 Add tomatoes & all spices to mixture along with 1 C.
  • Step #4 water.
  • Step #5 Cover & let simmer, stirring every once in awhile, until veggies are cooked, about 30 to 40 mins.
  • Step #6 You may need to add more water or oil as it evaporates.
  • Step #7 serve this with warmed whole wheat tortillas.
  • Step #8 We like to serve burrito style after spreading the tortilla with butter.
