Alu Gosht Kari (meat & Potato Curry) Recipe

Ingredients
  • 1/4 c Coconut oil
  • 1 x Salt
  • 1 x Peeked
  • 2 ea Garlic cloves, minced
  • 2 lb Potatoes, peeled and
  • 1 x Slices of green mango,
  • 2 tb Curry powder
  • 1 c Water

Directions
  • Step #1 Heat the coconut oil in a large skillet & fry the garlic until golden, stirring constantly.
  • Step #2 Remove the garlic from the oil and discard.
  • Step #3 Add the curry powder to the oil & saute for 5 mins, stirring constantly.
  • Step #4 Add the potatoes, mango, water, & salt to taste.
  • Step #5 Reduce the heat, & let simmer until the potatoes are tender, cover, about 15 mins.
  • Step #6 Serve as a vegetarian lunch, supper, or snack.
  • Step #7 The coconut oil can be found in any market that sells tropical foods.
