Alu Gosht Kari (meat & Potato Curry) Recipe

Ingredients
  • 2 tb Fresh coriander
  • 3 ts Salt
  • 2 tb Coriander
  • 1 1/2 kg Skirt steak
  • 1/4 c Oil
  • 2 ts Chilli powder
  • sliced
  • 2 tb Vinegar
  • 6 cl Garlic, crushed
  • 2 ts Garam masala
  • 1 tb Ginger, finely
  • 1 1/2 ts Turmeric
  • Finely sliced
  • 1/2 ts Fenugreek seeds
  • 750 g Cubed potatoes
  • 3 md Onions,
  • 1 tb Cumin
  • 1 ts Black mustard seeds
  • 2 tb Extra vinegar

Directions
  • Step #1 Cut steak into cubes.
  • Step #2 Heat oil & fry mustard seeds till they burst.
  • Step #3 Add fenugreek, garlic, ginger & onion.
  • Step #4 Fry until onions are golden.
  • Step #5 Add turmeric & fry 1 min.
  • Step #6 Add coriander, cumin and chilli.
  • Step #7 Stir well.
  • Step #8 Add salt & vinegar, & fry until liquid evaporates.
  • Step #9 Sprinkle top in the garam masala & mix well.
  • Step #10 Add meat and turn till coated.
  • Step #11 Add extra vinegar if spices start to stick.
  • Step #12 Reduce heat, cover & let simmer for 1.
  • Step #13 5 to 2 hrs.
  • Step #14 Add cubed potatoes and cover.
  • Step #15 Cook for a further 20-30 mins or until potatoes are cooked.
  • Step #16 Garnish with fresh coriander.
