Always Ready Bran Muffins Recipe

Ingredients
  • 2 tb Sugar
  • 3 Eggs
  • 2 tb Warm water -- 100-115 deg.
  • 1 ts Cool water
  • 1 ts Salt
  • 1/4 c Melted butter
  • 1 pk Active dry yeast
  • 2 c All-purpose flour -- sifted

Directions
  • Step #1 Soften the yeast in warm water & stir in the the sugar & salt to dissolve.
  • Step #2 In a bowl, beat 2 of the eggs & mix in the flour.
  • Step #3 Then stir in the the yeast mixture & melted butter.
  • Step #4 Knead vigorously in the bowl with the hands till the dough leaves the sides of the bowl and is elastic, about 5 mins.
  • Step #5 Make into a ball, put in a buttered bowl, & cover with plastic wrap.
  • Step #6 Let rise in a warm, draft-free place for 1 1/2 hrs, or until doubled in bulk.
  • Step #7 Punch down and divide into 18 equal pieces.
  • Step #8 Roll the pieces into balls & arrange, well separated, on a buttered baking sheet.
  • Step #9 Let rise 30 mins, or until doubled in size.
  • Step #10 Brush with the remaining egg beaten with a tsp of water.
  • Step #11 Bake in a preheated oven at 375 degrees for 10 mins, or until nicely browned.
  • Step #12 Cool on a rack.
