Step #1 CREPE SAUCE--- 1 c Water 1/4 c Honey or maple syrup 1/4 c Lemon juice 2 tb Arrowroot powder -OR- cornstarch 1 ts Finely grated lemon peel Beat eggs in mixer; add other liquids, then flour & salt.
Step #2 Heat small skillet.
Step #3 Oil lightly.
Step #4 Put 1-1/2 tbsps butter in pan and tip to spread over surface.
Step #5 Add 1/2 c batter.
Step #6 Bake.
Step #7 Turn crepe and bake other side.
Step #8 Fill cooked crepe with bananas or whipped tofu; roll up & cover with sauce.
Step #9 Crepe Filling: Sliced bananas or whipped tofu (see Golden Amaranth Short Cake recipe) Crepe Sauce: mix ingredients (except lemon peel) in a saucepan; stir & let simmer over med-heat/flame until clear & slightly thick; remove this from heat & stir in the peel.
