Anasazi Bean Spread Recipe

Ingredients
  • 1 Jalapeno or other pepper; finelysliced
  • 1 md Onion; sliced
  • 2 lg Garlic cloves; pressed or minced
  • Green onions; minced, and/or cilantro leaves for garnish
  • 1/4 ts Coriander
  • 1 c Anasazi beans, dry; picked over & rinsed
  • 1/2 ts Cumin
  • Salt to taste
  • Vegetable stock or water

Directions
  • Step #1 Cover the beans in water & soak overnight, allowing extra water for expansion.
  • Step #2 Drain, reserving soaking water.
  • Step #3 Measure soaking water and add stock or water to equal 6 c.
  • Step #4 pour this into pot.
  • Step #5 add in the remaining ingredients except salt & bring to a boil.
  • Step #6 Cover, reduce heat andcook at a low simmer for 1 1/2 to 2 hrs, or until beans are tender.
  • Step #7 Spice up this with salt to taste & serve hot, garnished with green onion and/or cilantro.
  • Step #8 Makes 4 servings.
