Ingredients
  • 2 lg Dried ancho chiles -- see
  • 1/2 c Butter

  • Step #1 (Note: New Mexico, pasilla, or California chiles can be substituted for ancho chiles.
  • Step #2 ) 1.
  • Step #3 Put chiles in a bowl & cover with boiling water.
  • Step #4 When they are rehydrated, drain them & put them in a food processor/blender or mixer; process until finely sliced.

  • Step #6 In a small saucepan over medium-high heat, melt butter.
  • Step #7 With machine running, add hot butter to chiles in a fine stream.
  • Step #8 mix until color is homogeneous & mixture is smooth.
  • Step #9 3.
  • Step #10 let this stand at about room temp until butter reaches a spoonable consistency.
  • Step #11 Use as soon as possible, or put in the fridge or freeze for later use.
  • Step #12 Microwave Version: Complete step 1.
  • Step #13 Put butter in a glass dish and microwave on 100% power until butter is melted, about 45 to 60 seconds.
  • Step #14 Continue with steps 2 & 3.
