Ancho-rubbed Game Hen Recipe

Ingredients
  • 5 Sun-dried tomatoes
  • 1/2 c Salad oil
  • 2 c Water
  • 1 c Rice wine vinegar
  • 2 tb Soy sauce
  • 2 tb Sugar
  • 2 Ancho peppers

Directions
  • Step #1 In a small saucepan over medium-high heat, boil peppers & tomatoes until soft & water is reduced by half.
  • Step #2 remove this from heat & cool.
  • Step #3 Drain peppers & tomatoes.
  • Step #4 Reserve cooking liquid.
  • Step #5 Puree pepper/tomato mixture.
  • Step #6 In a medium bowl, oil, whisk pepper/tomato mixture, vinerar, soy sauce & sugar.
  • Step #7 Adjust consistency & flavor to taste with reserved cooking liquid.
  • Step #8 Serve on fresh greens.
