Anchovy Yogurt Dressing Recipe

Ingredients
  • 1/4 ts Hot-pepper sauce
  • Hot toast strips
  • 2 tb Butter, softened
  • Watercress sprigs
  • 1 ts Lemon juice
  • 3 pn Cayenne pepper
  • Radish slices
  • 2 oz Anchovy fillets, drained
  • 1 oz Bel Paese cheese
  • 3 pn Ground nutmeg
  • 2 ts Capers, drained, finely sliced
  • 1 tb Milk

Directions
  • Step #1 Put anchovies into a bowl with milk.
  • Step #2 Let soak 30 mins.
  • Step #3 Drain well, then pat anchovies dry with paper towels.
  • Step #4 Chop anchovies finely & put into a bowl with butter & cheese; mix well.
  • Step #5 Add lemon juice, cayenne, nutmeg & hot-pepper sauce.
  • Step #6 In a mixer or food processor/blender, process to a smooth puree scraping mixture from sides of bowl every once in awhile.
  • Step #7 Add capers & mix well.
  • Step #8 Spread thinly on toast.
  • Step #9 Garnish with radish slices & watercress.
  • Step #10 NOTE: This mixture will keep in refrigerator for up to 5 days.
