Chocolate Turtle Cheesecake Recipe

Ingredients
  • 1 (14 oz) package individually wrapped caramels
  • 1 (5 oz) can evaporated milk
  • 2 tbsps unsalted butter, melted
  • 1 c sliced pecans
  • 1 tsp vanilla extract
  • 1/2 c white sugar
  • 1/2 c semisweet chocolate chips
  • 2 c vanilla wafer crumbs
  • 2 (8 oz) packages cream cheese, softened
  • 2 eggs

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a large bowl, mix together the cookie crumbs & melted butter.
  • Step #3 Press into the bottom of a 9 inch springform pan.
  • Step #4 In a heavy saucepan over low heat/flame, melt the caramels with the evaporated milk.
  • Step #5 Heat & stir frequently until smooth.
  • Step #6 Pour caramel sauce into crust, & top this with pecans.
  • Step #7 In a large bowl, mix cream cheese, sugar & vanilla; beat well until smooth.
  • Step #8 Add eggs one at a time, mixing well after each addition.
  • Step #9 Melt the chocolate, & mix into cream cheese mixture.
  • Step #10 Pour chocolate batter over pecans.
  • Step #11 Bake in preheated oven for 40 to 50 mins, or until filling is set.
  • Step #12 Loosen cake from the edges of pan, but do not remove rim until cooled to prevent the top from cracking.
  • Step #13 Chill in refrigerator for 4 hrs, or overnight.
