Ingredients
  • 1 ts Cream of tartar
  • 1 c Egg white
  • 1 1/4 c Sugar
  • 1 ts Vanilla
  • 1/4 ts Almond extract
  • 1/4 ts Salt
  • 1 c Cake flour

Directions
  • Step #1 BOILED ICING--- 1 1/2 c Sugar 1/4 ts Cream of tartar 3/4 c ;water 1/4 ts Salt 3 Egg white 1 ts Vanilla 1/4 ts Almond extract Sift flour once, measure & sift four more times.
  • Step #2 Measure sugar and sift or roll if coarse.
  • Step #3 Add salt to egg whites & beat until foamy; add cream of tartar & continue beating until stiff but not dry.
  • Step #4 Fold in the sugar, one tbsp at a time, then the flour in the same manner.
  • Step #5 Add flavorings.
  • Step #6 Bake in an angel cake (tube) pan in a 275 F.
  • Step #7 oven for 30 mins, then increase the heat to 300F F.
  • Step #8 after the cake has risen to its full height, & bake 15 mins longer or until the cake shrinks slightly & is well browned.
  • Step #9 remove this from oven & invert pan until cake is cold.
  • Step #10 remove this from pan & ice if desired.
  • Step #11 The cake in the illustration is iced with Boiled Icing tinted yellow, & settled in a nest of coconut tinted green.
  • Step #12 The breen leaves are mode with green icing.
  • Step #13 The flowers are cut from marshmallows, & tinted with violet coloring.
  • Step #14 Boiled icing: Mix sugar, cream of tartar & water & cook over low heat until syrup spins a thread (240 F).
  • Step #15 Meanwhile, add salt to egg whites & beat with a flat beater until stiff.
  • Step #16 Pour syrup in a thin stream over the egg whites; add flavorings.
