Apple & Matzo Kugel Recipe

Ingredients
  • 4 md Onions
  • 24 sm Green tomatoes
  • 2 1/2 c Brown sugar
  • 3 tb Mixed pickling spices
  • 4 c Cider vinegar
  • 1/2 ts Crushed, dried chilies
  • 2 tb Salt
  • 1 1/2 tb Curry powder
  • 3 c Seedless raisins
  • 12 Tart green apples

Directions
  • Step #1 Wash, core & chop the apples; wash, blanch, peel & chop the apples & chop the onions.
  • Step #2 Place apples, vinegar, salt, sugar, tomatoes & onions in a preserving kettle & add raisins, red pepper & curry powder.
  • Step #3 Put the pickling spices in a cheesecloth bag and add to the kettle.
  • Step #4 Boil, for 25 mins, stirring every once in awhile, or until apples are transparent.
  • Step #5 Remove fruit with a slotted spoon.
  • Step #6 Boil syrup rapidly until it thickens.
  • Step #7 Discard pickling spices, return the fruit to the syrup & bring to a boil.
  • Step #8 remove this from the heat & ladle into hot, sterilized jars & seal as soon as possible.
  • Step #9 Process in boiling water bath for 10 mins.
  • Step #10 This recipe makes approximately 24 half-pints.
