Apple & Oat Bran Muffins Recipe

Ingredients
  • 1/4 ts Baking soda
  • 1 tb Lemon juice
  • 1/4 c Finely sliced walnuts
  • 8 tb Unsalted butter; softened
  • 1 ea Large egg
  • 1 x Confectioners' sugar
  • 1 x Grated zest of 1 lemon
  • 1 x -DOUGH:
  • 1 x -Dottie Cross TMPJ72B
  • 2 1/2 c Sifted all-purpose flour
  • 1 x -for dusting
  • 1 1/4 c Sugar
  • 1 1/2 ts Vanilla extract
  • 1 x -FILLING:
  • 1/2 ts Salt
  • 2/3 c Apple butter

Directions
  • Step #1 To make the dough: In a medium bowl, beat the butter until creamy, using a hand-held electric mixer set at high speed, about 1 min.
  • Step #2 Add the sugar & beat until light in color & texture, about 2 mins.
  • Step #3 Beat in the egg & vanilla.
  • Step #4 Sift the flour with the salt & baking soda.
  • Step #5 slowly add the flour mixture to the butter mixture, beating well after each addition.
  • Step #6 Scrape the dough onto a large piece of plastic wrap & wrap tightly.
  • Step #7 put in the fridge until the dough is firm enough to roll out, at least 6 hrs, or preferably overnight.
  • Step #8 To make the filling: mix the apple butter, lemon zest, lemon juice, & walnuts & mix well.
  • Step #9 Preheat the oven to 375 degrees.
  • Step #10 Divide the dough into 4 portions.
  • Step #11 On a lightly floured work surface, roll out one portion of dough to 1/8 inch thickness.
  • Step #12 (If the dough crumbles, work in your hands until malleable.
  • Step #13 ) Using a 3-inch round cookie cutter, cut out rounds of the dough.
  • Step #14 Gather up the scraps to work into the remaining dough.
  • Step #15 Repeat the process until all the dough has been used.
  • Step #16 Place a rounded tsp of the filling in the center of half of the rounds.
  • Step #17 Brush the edges of the rounds lightly with water.
  • Step #18 Place the remaining rounds on top of the filled cookies.
  • Step #19 Using a fork, press the edges sealed.
  • Step #20 Don't worry if cracks appear in the surface.
  • Step #21 Transfer the cookies to ungreased baking sheets.
  • Step #22 bake this until lightly browned, 12 to 15 mins.
  • Step #23 Transfer to wire racks & cool completely.
  • Step #24 Sprinkle top with confectioners' sugar before serving.
  • Step #25 Makes about 20 large cookies.
