Apple & Oat Bran Muffins (ovo Lacto) Recipe

Ingredients
  • 2 x Egg Whites
  • 1 1/4 c Whole Wheat Flour
  • 1 c Oat Bran
  • 1/3 c Packed Brown Sugar
  • 1/4 ts Salt
  • 3/4 c Shredded, peeled Apple
  • 2 tb Cooking Oil
  • 1/4 ts Cinnamon
  • 1/4 ts Ground Nutmeg
  • 1 c Buttermilk
  • 2 1/2 ts Baking Powder
  • 1/4 ts Baking Soda

Directions
  • Step #1 In a med bowl stir this together flour, nutmeg, salt, baking powder, oat bran, brown sugar, baking soda, & cinnamon.
  • Step #2 Set aside.
  • Step #3 In a small bowl mix buttermilk, & oil, egg whites, Add to dry ingredients; stir just till moistened.
  • Step #4 stir in the shredded apple.
  • Step #5 Store batter, tightly covered, in the refrigerator for up to 5 days.
  • Step #6 To bake, spray muffin c with non-stick spray coating.
  • Step #7 Spoon about 1/4 c batter into each muffin c.
  • Step #8 Bake in a 375 deg F oven for 18-20 mins or till a toothpick inserted near the center comes out clean.
  • Step #9 Makes 12 muffins.
  • Step #10 Per serving: 124 calories, 1 mg cholesterol, 162 mg sodium, 22 g carbohydrates, 3 g fat, 4 g protein, 162 mg potassium.
