Apple Beet Borscht Recipe

Ingredients
  • 1/2 c Dry white wine
  • 1 c Apple juice
  • 3 tb Dijon mustard
  • 1 Beef brisket ; trimmed of fat
  • 10 Cloves garlic; whole
  • 3/4 ts Curry powder
  • 1 lg Yellow onion; peeled and quartered
  • 3/4 ts Freshly ground black pepper
  • 10 oz Jar apple jelly
  • 1/2 ts ;salt
  • 1/4 c Parsley; sliced, for garnish
  • 2 lg Cloves garlic; sliced
  • 2 lg Green onions; sliced about 1/4 c

Directions
  • Step #1 Place brisket, the yellow onion, sliced garlic & garlic cloves in a large Dutch oven.
  • Step #2 Add water to cover & bring to a boil.
  • Step #3 Reduce heat, cover & let simmer 2 1/2 hrs or until the brisket is tender.
  • Step #4 Drain brisket.
  • Step #5 (If you wish, you could keep the brisket covered with the cooking liquid & put in the fridge it overnight.
  • Step #6 This will help prepare for the next day.
  • Step #7 ) In a small saucepan, salt, mustard, wine, mix together the apple jelly, pepper, green onions, & curry powder.
  • Step #8 Heat until the jelly melts.
  • Step #9 Place brisket in a shallow roasting pan & brush some of the jelly mixture over the top.
  • Step #10 bake this at 325F degrees F.
  • Step #11 for 45 mins, basting 3 or 4 times with the remaining jelly mixture.
  • Step #12 Remove the meat to a platter to keep warm.
  • Step #13 Place the pan over 2 burners & add apple juice, stirring to scrape up browned bits on bottom of pan.
  • Step #14 Bring to a boil over medium-high heat.
  • Step #15 Boil, stirring, until slightly thickened & reduced by about half.
  • Step #16 pour this into a gravy boat.
  • Step #17 Slice meat & garnish with the parsley.
  • Step #18 serve this with gravy.
  • Step #19 Makes 8 servings Per 4-oz cooked meat with 3 tbsps gravy: 396 calories, 33 g pro, 15 g fat, 30 g car, 105 mg chol, 295 mg sod.
